Zucchini and Squash on Brown and Wild Rice

Tonight, I had some zucchini in the fridge and I had some yellow squash. So, I decided to saute it in vegetable broth and put it on some brown and wild rice for a dinner.


Then I put a bunch of black pepper on it and cut the zucchini and squash up and mixed it in with the rice.


Adding the pepper really spiced it up. I enjoyed this dinner much more than I actually expected to. And the nice thing about sauteing in vegetable broth instead of olive oil is it makes the cleanup of the pan so much easier.

It was an easy meal to make and an easy meal to clean up afterwards from. And it was very tasty.
