Now you may think that I'm biased, and I am, but I too believe this chocolate cake was the best cake I've ever had. And that includes some rather expensive cakes that I've had before. This cake was moist and dripping with dark chocolate. And it was substantial. And sweet. Nobody would ever believe this cake was made with no egg, no milk, no milk chocolate, etc. It was that good.

VEGAN CHOCOLATE CAKE
Oven temp: 350*
Pan: 9 x 9” nonstick
Bake 25-30”
1 ½ C whole wheat flour, 3 T unsweetened cocoa powder, 1 t
baking soda, 2/3 cup pure maple syrup,
6 T unsweetened applesauce, 1 T white vinegar, 1 t vanilla
extract and ¾ C cold water.
Mix everything together and pour into pan. Nuts &/or vegan chips may be added in the
mixture.
Icing: Place some
vegan chips on top of cooked hot cake and when chips melt-ice cake by spreading
around! Powdered sugar can be added on
top of cooled cake too!
