I think I've gotten stuck in a rut where almost everything I've eaten lately has been centered around legumes of one sort or another. I need to now start thinking about getting more variety into my diet again.
So, thinking along those lines, I made a fruit salad for lunch today.
There's nothing particularly spectacular about this lunch, except that it was a nice change from the bean-oriented soups that I've been making.
I started by placing a bed of spinach in the bottom of a bowl and then adding a sliced apple, tangerine, banana and avocado. To dress it, I used Avocado Vinaigrette from Whole Foods Market.
A salad like this has me ready for Spring to come!
