Here is a wonderful sweet potato lasagna, that's all vegan, and about to be devoured by me.
That's one of about ten servings that this lasagna makes. It's called Raise the Roof Sweet Potato Lasagna and I got the recipe from the Engine 2 Diet site. It's one of the more complicated recipes that I've made. But it's oh so good. And it's probably just complicated for me since to date, I've kept my recipes fairly simple.
A big part of it was just getting the ingredients ready to put into the lasagna.
I think this vegetable mixture is part of what makes this lasagna so tasty and so interesting. And of course, it gave me quite a variety of vegetables to have each night for dinner. Here's a sneak peak as I put a layer of the mix containing onion, mushrooms, broccoli, red bell peppers, corn, tofu and seasonings on to the lasagna noodles covered in tomato sauce.
Then came more noodles and tomato sauce topped then with spinach and mashed sweet potatoes.
On top of that goes more noodles and tomato sauce and then sliced Roma tomatoes on top of that. Once it's almost cooked, ground raw cashews get added to top it off. Here's a look at the finished product.
It's very good and what is made here will last me for a week of dinners. I think this would be a great dish to make for when company comes to visit me as well.
Finally, there was enough of the vegetable mix left over for me to have it for lunch one day by itself.
You can see that there was ground cashew left over as well to put on this salad. It took me a while to make all this (remember, I'm just a novice!), but I'm glad I did make it. It was very worthwhile learning to do it and it's very enjoyable to eat.
