A Winter Vegetable Cassoulet

Normally, you might think of a cassoulet as containing something like pork sausage in it. But last night, my grandchildren, with a little help from my daughter, made me a cassoulet of winter vegetables and white beans instead of pork sausage.

The ingredients for this great tasting dish included:

  • Diced celery root (a new taste experience for me)
  • Peeled and diced rutabaga
  • Peeled and diced acorn squash
  • Chopped onions
  • Salt and pepper
  • Ground nutmeg
  • Dry white wine
  • White beans (from cans)
  • Vegetable broth
  • Thyme
  • Tomato paste
  • Fresh sage
