Jim's Crab Pot (Vegan) Bean Soup

Because I'm vegan, I try to eat beans at least once a day. This bean soup is a great way to do that. For others, this might just be a great recipe for a cold winter's night. And since it contains no meat or added fats, it's very healthy and good for you.

I use a crab pot to make it in. Here's the recipe:


1 pound of Brighter Day's 7-Bean Mix (or any mixture of dried beans of your choosing)
14 cups of vegetable broth
2 large chopped onions
2 large potatoes, diced (peel if you desire; I prefer to leave  the skin on however)
4 large carrots, peeled and sliced
2 cans 10 oz. diced tomatoes and green chilis (optional -- this makes the soup quite spicy, which I like)
1 can 28 oz. whole tomatoes
1/2 tsp minced garlic
1/2 cup lemon juice
Dash of salt
Dash of pepper


Rinse and drain beans
Soak beans overnight
Drain and place beans in a large crab pot
Pour in vegetable broth
Add onion and potato
Bring to a rapid boil, then reduce heat to simmer for 1-1/2 hours
Stir occasionally while simmering
Add remaining ingredients
Continue to simmer for one more hour
Salt and pepper to taste
Remove from heat and enjoy
Cover remainder of soup
Refrigerate remaining soup after it has cooled down
