Jim's Bok Choy and Beet Leaf Salad

This salad is made on a bed of raw beet leaves, topped with raw bok choy and garnished with yellow pepper, radishes, carrots, onion, portabella mushrooms and cherry tomatoes. I used champagne vinegar for the dressing.


Here it is with last night's dinner, which included stir-fried ginger bok choy from the Happy Herbivore on top of Lundberg's Wild Blend Rice cooked in my rice cooker along with steamed yellow beets:
