Jim's Black Rice and Veggies

Black rice is one of the most nutritious foods you can buy. I've developed a recipe for it that is simply delicious. Note that quantities listed make 2 main servings. I had it with a cucumber and tomato salad and a raw kale salad.

Start by putting a cup of black rice in a pan with 1-/3/4 cup of water.


Bring the rice to a rapid boil, then add the following ingredients while simmering until the water has been absorbed:

  • 1/2 onion, peeled and chopped
  • 9 ounces of cherry tomatoes
  • 1 large garlic clove (or 2 regular size garlic cloves)
  • Salt to taste
When ready to serve, sprinkle with basil and ground flaxseed.
