I've found the greatest whole foods, plant-based restaurant that will always get my attention when I'm in Charlotte, NC. It's called Luna's Living Kitchen and it specializes in "living foods." That is the foods are plant-based, whole organic foods mostly served raw. And they are delicious.
Here's tonight's dinner.
It's hard to see through the sprouts, but it's called Gaia's Treasure. In the bowl are Shittake mushrooms, carrots and broccoli tossed in a ginger-sesame sauce and served over cauliflower rice and zucchini noodles. On the side is a small salad of local greens.Very, very good.
Starting the day off, I went liquid with the Tree of Life juice.
This is 16 oz. of kale, parsley, celery, cucumber, lemon, ginger and cayenne. I know some of my old breakfast buddies with whom I shared many a chicken fried steak breakfast with are by now wondering what has happened to me. But being lighter and more energetic, and actually enjoying this kind of food, I've found a new passion in life.
So, what's for lunch? Well, this too came from Luna's Living Kitchen. This is a sandwich containing all kinds of good raw foods, including avocado, tomato, red onion and sprouts on a delicious whole grain bread.
So, that's a day's worth of meals at Luna's Living Kitchen in Charlotte. Next time you're in Charlotte, you'll have to give it a try. I know I'll be back.
