This is really easy to make. Start with some fresh spinach leaves and then start putting in the toppings. Here, I have cut up carrots, radishes, red peppers and tomatoes. You could also add broccoli, cauliflower or other nutritious veggie toppings if you like. Then top it with almond slivers and dried cranberries. Add raspberry vinaigrette (I never use oil to top my salads). This was simple store-bought vinaigrette, but you can get some good vinegar to top your salads with at Whole Foods in Savannah or at The Oilerie on Hilton Head Island. I like the Pear Vinegar and the 25 Year-Aged Vinegar at the Oilerie as well as some of the champagne vinegars from Whole Foods.
